Spicy Hot Dogs

Ingredients

• 5 LBS Ground Beef
• 1 3/4 TBP Kosher Salt 
• 2/3 TBP Paprika 
• 1/2 TBP White Pepper 
• 1/3 TBP Granulated Garlic 
• 1/3 TBP Mustard Powder 
• 1/8 TBP Granulated Onion 

Instructions

• Mix spices together in a separate bowl 
• In a mixer, blend ground beef with spices mixture
• Add water, a little at a time, and mix until fully emulsified 
• Stuff into casings 
• Refrigerate overnight 
• Cook in water (142F) for 2 hours
